Baked Rice, Potatoes and Mussels
This spectacular baked dish beautifully highlights the deep connection between the land and the sea. Layers of incredibly fresh local mussels, thinly sliced potatoes, and raw rice are arranged perfectly in a terracotta pot. The entire combination is covered with water, pecorino cheese, and breadcrumbs, then baked slowly in the oven. The rice perfectly absorbs the rich, briny liquids from the mussels, creating a deeply savoury and cohesive flavour profile. The top layer always develops a wonderful, irresistible crust. It requires immense skill to prepare properly, making it a highly respected dish on any local menu.
