    The vast agricultural plains surrounding the city explode into sharp, bright green. The brutal winter winds die down, making the exposed walk along the fortress ramparts highly enjoyable. Market stalls in Place Carnot suddenly fill with early artichokes and thick stalks of asparagus. The intense summer crowds have not yet arrived, leaving the narrow streets of the Cité relatively quiet.

    The city operates at maximum volume and capacity. The heat is punishing, baking the heavy stone walls of the fortress and driving locals into the deep shade of the Bastide's plane trees. Massive concerts take over the open-air theatre, and jousting tournaments kick up thick dust in the moat. The smell of hot asphalt mixes with sunscreen and spilled beer.

  • Autumn

    The temperature drops sharply, and the smell of crushed grapes drifts in from the nearby Malepère and Corbières regions. The heavy canopy of trees along the Canal du Midi turns a violent, burning yellow. Restaurants finally remove the lighter summer salads from their menus, committing fully to heavy, slow-cooked cassoulet. The slanting afternoon light makes the castle stone look incredibly dramatic.

    A biting, aggressive wind sweeps straight down from the Black Mountain, clearing the streets completely. The medieval fortress becomes eerily deserted, allowing you to walk the dark, damp alleyways completely alone. Heavy wood smoke hangs low over the lower town. It is the absolute best time to eat rich, fat-heavy local food in a crowded, heated tavern.
