This is arguably the most iconic traditional dish originating right from the capital region. It is a rich, incredibly flavourful baked mixture of peeled tomatoes, roasted red peppers, onions, and salty feta-like cheese. The ingredients are slowly cooked together in a clay pot until they meld into a thick, highly comforting dip. You must eat it piping hot, scooped up with generous tears of fresh, crusty bread.
