Patience Cake
A highly elaborate and historic local dessert with roots stretching back to the seventeenth century convent bakeries. It features complex, alternating layers of rich almond pastry, delicate sponge cake soaked in liqueur, and a remarkably smooth zabaglione cream. Finally, it is generously topped with dark chocolate shavings. The name supposedly derives from the immense patience required to carefully construct its many layers. It is an incredibly indulgent, sophisticated treat that pairs perfectly with a strong afternoon espresso.
