Dried Lake Shad
This unique delicacy is the most famous example of the area's historic lake fishing traditions. Small fish known as 'agoni' are caught, carefully cleaned, salted, and then sun-dried in the open air before being pressed into wooden barrels. When ready to eat, they are briefly grilled to reawaken their intense, salty flavour and almost always served alongside a steaming slice of plain polenta.
